Making and Canning Elderberry Syrup

Elderberry can be found in many places all over the world. Here in North America, common elderberry is the most medicinal of the species. In Europe the black elderberry is probably the most uses. The berries are excellent medicinals, used for centuries for upper respitory infections. In Italy it is still used as Sambucus syrup, and recipe that was used in Roman time.

This is a very similar recipe, with maybe a few less spices (ginger and cloves are the two the are most added). A day’s gathering and preparing gives a whole winter’s supply of a wild food AND medicine. Elderberry syrup is a yummy and nutritional addition to anyone’s healing cupboard.
